In-season cranberries are the featured food in this month’s Heart Healthy Recipes’ newsletter. The fall, cranberry harvest season is usually mid-September through November.

The red, tart berry adds festive brightness to so many recipes ~ including a heart-healthy trail mix, naturally sweetened cranberry and chocolate cookie recipe, along with a cranberry sauce and cobbler recipe.

Also, included are the many heart-health benefits of cranberries.


Health Benefits of Cranberries

The antioxidant-rich cranberries help protect the heart by protecting cells from free radical damage, along with reducing inflammation and improved blood vessel function. Also, the high antioxidants in cranberries have been shown to improve cholesterol levels.

Recent studies have shown that consuming cranberry juice on a regular basis may help reduce blood pressure, particularly diastolic blood pressure.

The vitamins and minerals contained in cranberries help provide good, overall health. Cranberries contain manganese, potassium, and copper. Also, the potassium in cranberries helps to regulate blood pressure and reduce the risk of high blood pressure or hypertension. In addition, the potassium in cranberries helps to balance out the effects of sodium and is essential for the proper function of muscles, including the heart muscle, which relies on potassium for each beat.

The high-fiber content in the cranberries helps to regulate cholesterol levels, along with reducing the risk of heart disease. Also, the fiber in cranberries helps to manage weight.


Cranberry Trail Mix

Healthy mix of in-season seeds and nuts, along with heart-healthy, dark chocolate combine with dried cranberries.

Recipe Ingredients:

2-3 medjool dates, chopped

½ cup almonds

½ cup walnuts

⅓ cup pumpkin seeds

⅓ cup sunflower seeds

¼ cup dried cranberries

¼ cup dark chocolate chunks, unsweetened

Recipe Instructions:

Remove pits from the medjool dates and chop. In a mixing bowl, add the nuts, seeds, cranberries, chocolate and chopped dates.

Mix together to combine.

Makes 8 servings.


Naturally Sweetened Cranberry Sauce

This naturally sweetened cranberry sauce recipe is made with fresh cranberries, honey, along with orange zest.

Recipe Ingredients:

12 oz. cranberries, 1bag fresh

½ cup honey

½ cup water

Zest of 1 medium orange, approximately 1 teaspoon

½ teaspoon cinnamon

¼ cup orange juice

Recipe Instructions:

Rinse cranberries and drain off excess water. Sort through the berries and discard moldy or uneatable ones.

In a medium saucepan, combine the cranberries, honey, and water.

On medium-high heat, bring the mixture to a boil, then reduce heat to medium-low, stirring occasionally until mixture is thickened, about five to ten minutes.

Remove pan from heat and stir in orange zest, cinnamon, and orange juice.

Cover and store in refrigerator for up to one week.

Makes approximately 2 cups.




Cranberry Cobbler

Dairy-free, cranberry cobbler naturally sweetened with apple juice.

Cobbler Crust - Recipe Ingredients:

1½ cups flour

1 teaspoon sea salt

½ cup grapeseed oil

2 tablespoons plant-based milk, e.g. rice milk or oat drink

Cobbler Filling - Recipe Ingredients:

¾ cup apple juice, unsweetened 

2-3 tablespoons cornstarch

2 cups cranberries

Recipe Instructions:

Pre-heat oven to 375°F. 

In medium mixing bowl, combine flour and sea salt together.

In small mixing bowl, whisk oil and milk together. Next, pour oil and milk mixture over flour mixture. Combine together with fork and set aside.

Combine apple juice, cornstarch and sea salt. Heat until thickened and then add cranberries. 

Divide cobbler crust mixture in half and form six round balls, then press flat on cookie sheet or baking tray making a round circle. 

Next, place approximately 2 tablespoons of cranberry filling on each flatten circle (half of the cranberry filling will be left-over for topping). Then make six more round balls and flatten in palm of hand and cover cranberry filling.

Bake at 375°F for 20 minutes or until crust is golden brown.

Serve with remaining cranberry filling for topping.

Makes 6 servings.

Cranberry and Chocolate Cookies

Antioxidant-rich cranberries combine with heart-healthy dark chocolate chips to make a delicious holiday cookie.

Recipe Ingredients:

2 cups rolled oats

3-4 bananas

½ cup almond butter

3 tablespoons dried cranberries, unsweetened

¼ cup dark chocolate chips, unsweetened

Recipe Instructions:

In a large mixing bowl, combine oats, mashed bananas, and almond butter. Mix well. Fold in the chocolate pieces and dried cranberries. Form 12 round balls on a baking tray, pressing down into a cookie shape.

Bake the cookies for 12-15 minutes, or until the edges are golden brown.

Remove cookies from the oven and allow to cool for 15 minutes.

Makes 12 servings.
