Health Benefits of Romaine LettuceRomaine lettuce hearts help support the human heart with nutrient-rich vitamins of A, C, and K, along with folate. The mineral-rich, romaine lettuce contains potassium that helps lower blood pressure, reduces excess sodium, relaxes blood vessels, and supports a healthy heart rhythm.This in-season, fiber-rich, leafy green is low in calories, and high in water, helping to maintain healthy (HDL) cholesterol levels. The fiber in the romaine lettuce may also help manage blood pressure, along with weight-loss and maintaining a healthy weight by allowing one to feel full. Grilled Romaine LettuceSummer grilled romaine lettuce topped with a heart healthy dressing.Recipe Ingredients:1 tablespoon red wine vinegar2 garlic cloves, minced 1 teaspoon mustard sea salt, to taste (optional) black pepper, to taste (optional) 2 tablespoons extra-virgin olive oil (EVOO) 3 romaine lettuce hearts 1 lemon, cut in half ¼ cup Parmesan cheese (optional) Recipe Instructions:Preheat grill over medium-high heat, about 350 to 400ºF (177 to 204ºC).In a small bowl, whisk together the vinegar, garlic, mustard, sea salt (optional), pepper, and olive oil for a dressing. Whisk until emulsified and smooth. Set dressing aside. On a cutting board, cut the romaine lettuce lengthwise and in half, making 6 halves. Brush lightly on both sides with olive oil. On the preheated grill grates, arrange the romaine leaves and lemon halves (cut-side down). Next, press down on the romaine lettuce for direct contact with the grates. Cook until lettuce is lightly charred, approximately 2 to 3 minutes. Turn leaves over and cook 1 to 2 minutes more. Place lettuce and lemons onto a serving plate. Sprinkle the grilled lettuce with Parmesan cheese, if desired. Drizzle dressing on grilled romaine leaves, along with squeezed lemon, and serve.
Romaine Hummus WrapRomaine hummus wraps are a low-carb, meal option with crisp romaine leaves and a variety of proteins, and veggies.Recipe Ingredients:1 medium carrot, sliced1 medium cucumber, sliced 1 cup red cabbage, shredded 6 green onions, diced ½ cup cilantro, chopped 1 cup vegan hummus 8 romaine lettuce leaves Recipe Instructions:On a cutting board, slice carrot and cucumber into matchstick pieces. Place in a medium-sized bowl. Next, shred the cabbage, adding to bowl. Dice and chop green onions and cilantro. Add to bowl, along with vegan hummus.Place the romaine leaves on a clean, flat surface with curved side facing upwards. Place equal proportions of veggie-hummus mixture onto each romaine leaf. Roll each leaf up and set rolled side down to avoid unraveling.

Cast Iron Skillet ~ Made in the USA ~ Click Here for Details Summer Caesar SaladClassic, summer Caesar salad with romaine lettuce leaves, anchovy fillets, garlic, mustard, and more.Recipe Ingredients:½ cup extra-virgin olive oil (EVOO)3 cups day-old bread cubes (about ½-inch cubes) 1 teaspoon sea salt (optional) 3 or 4 anchovy fillets 2 garlic cloves, coarsely chopped 1 teaspoon mustard 2 tablespoons lemon juice 4 ounces Parmesan cheese, shredded black pepper, to taste 3 medium romaine lettuce hearts (approximately 1½ pounds) Recipe Instructions:In a large skillet, over medium-high heat, heat 2 tablespoons of the olive oil. Add the bread cubes to the pan, sprinkle with sea salt (optional), toss to coat with the oil and arrange in a single layer. Toast the bread, tossing every minute or so, until the bread cubes are golden-brown on all sides, approximately 5 minutes. Remove the pan from the heat and allow to cool.Chop the anchovies and garlic together until the mixture is smooth and paste-like. In a medium bowl, place the anchovy-garlic mixture and combine in the mustard. Pour in lemon juice and whisk until smooth. While whisking, slowly add the remaining olive oil and continue to whisk to thicken. Add in the Parmesan cheese and black pepper to taste. Cut the romaine lettuce into bite-sized pieces and rinse with cool water. Spread the romaine lettuce out onto a clean kitchen towel and pat dry. In a large bowl, place the romaine lettuce, add half of the dressing, and toss to combine.
Add the croutons and toss again. Season with pepper. Add some Parmesan for both garnish and seasoning.
