Heart Healthy Recipes, Issue #057 - Avocado Chocolate Pudding, Black Bean Brownie & Avocado Smoothie

This month’s newsletter features an avocado chocolate pudding recipe, along with black bean brownies and a heart-healthy avocado smoothie.


Avocado Chocolate Pudding

Naturally sweetened vegan pudding made with heart-healthy avocados, dark chocolate, and plant-based milk.

Recipe Ingredients:

4-5 large avocados, ripe

½ cup plant-based milk, almond or oat

⅓ cup honey or maple syrup

½ cup dark cocoa powder

Recipe Instructions:

Cut avocados in half and remove pits. Scoop avocado flesh out of shell and add into a food processor or a high-speed blender. Next, add plant-based milk, honey, and cocoa. Blend until very smooth. Pour into containers with lids and refrigerate until chilled. Best served cold.

Makes 6 servings.

Black Bean Brownies

Protein-rich black bean brownies help provide a heart-healthy treat for Valentine’s Day or any snacking occasion.

Recipe Ingredients:

1 15 oz. can black beans, drained and rinsed

3 tablespoons dark cocoa powder

½ cup rolled oats

⅓ cup honey or maple syrup

¼ cup coconut oil

1 teaspoon vanilla extract

½ teaspoon baking powder

½ cup cacao nibs

Recipe Instructions:

Preheat oven to 350°F. Place all ingredients in a food process or blender, except for the cacao nibs. Blend until smooth. Next, stir in the cacao nibs and pour mixture into a greased 8 x 8-inch baking pan. Bake the brownies for approximately 15 minutes. Remove from oven and allow to cool for another 15 minutes before serving.

Makes approximately 10 brownies.

Avocado Smoothie

The avocado in this smoothie recipe adds richness and nutrition, along with a high amount of heart-healthy omega-3 fatty acids.

Recipe Ingredients:

½ ripe avocado

1 ripe banana, fresh or frozen

1 green apple, medium to large

1 cup frozen pineapple chunks

1 cup plant-based milk, almond or oat

5 ice cubes

Recipe Instructions:

Remove pit from the avocado and scoop one half of the flesh into a high-speed blender. Peel banana and then chop the apple, leaving the skin on and add both to the blender. Next add the pineapple, along with the plant-based milk and ice cubes. Blend until smooth.

Makes 2 servings.
