Benefits of Pomegranates:Currently we are sharing the heart health benefits of in-season foods, along with several recipes to help include in a heart-healthy diet. This month the focus is on pomegranates.
The antioxidant-rich pomegranate is a versatile fruit for smoothies, main dishes, salads, relishes, garnishes, and more. The heart healthy pomegranate is considered one of the healthiest fruits with its powerful antioxidants. In fact, the concentrated antioxidant activity in the pomegranate has been shown to be three times higher than those of red wine and green tea

Dark Chocolate PomegranatesPomegranate snack with heart-healthy dark chocolate. Consuming dark chocolate, preferably 90% or higher of cocoa, may benefit the heart.
Recipe Ingredients:2½ cups pomegranate seeds
5-7 ounces high-quality dark chocolate (best 90% or more of cocoa)
Recipe Instructions:In 12 muffin tins, paper lined if possible, sprinkle a single layer of pomegranate seeds. If muffin tins are not available using parchment paper works as well.
In a double boiler or microwave, melt the dark chocolate in a small bowl. Checking frequently to ensure not burning. Take off stove burner. Allow to cool before adding to a piping bag or plastic bag - though Stirring occasionally so chocolate does not become too firm. Once in piping bag - cutoff end to allow chocolate to exit bag.
With the pipe bag make an even pattern of chocolate across the pomegranate seeds. Add another layer of pomegranate seeds, then more chocolate, and then the last layer of pomegranate seeds.
Refrigerate for at least one hour before serving.
