Homemade Tomato Salsa

Homemade tomato salsa made with heart-healthy tomatoes, peppers, onions, and garlic. These ingredients also benefit the heart by helping to lower cholesterol and blood pressure.

This homemade tomato salsa is high in antioxidant properties as well.  One of these being the anti-oxidant nutrient of lycopene in the tomatoes. Research has shown that the high lycopene content in tomatoes may help lower LDL (unhealthy) cholesterol, and keep blood from clotting which may help lower stroke risk.

The antioxidants in the onions, garlic, and peppers seem to help lower unhealthy cholesterol.  The onions may also help reduce blood pressure and inflammation. Chronic inflammation has been linked to many diseases including heart disease.  Also, the antioxidant-rich garlic and peppers help lower cholesterol as well.

Recipe Ingredients:

4 medium tomatoes, diced 

¼ cup fresh cilantro leaves, chopped

½ green pepper, cut into cubes or minced 

1 garlic clove, minced 

½ cup sweet onion, chopped

½ cup red onion, chopped

1 tablespoon lime juice

1 tablespoon grape seed oil

Recipe Instructions:

On cutting board, dice tomatoes into even cubes and add to a medium bowl.  Next, chop cilantro leaves and add to bowl.  Cube or mince green pepper - adding to mixture along with minced garlic and chopped onions.  Add lime juice and oil, mixing gently. Transfer to serving bowl.
