Spinach Tomato Salad

This delicious spinach tomato salad is loaded with heart-healthy nutrients, including grape tomatoes, raw cashews, basil, ginger and drizzled with heart healthy olive oil.

The spinach provides nearly 20 percent of the daily recommended allowance of dietary fiber, helping to maintain low blood sugar. Spinach also lowers blood pressure, which could help prevent strokes, heart attack and other potentially life-threatening heart problems. The antioxidant rich grape tomatoes help lower high cholesterol levels. While the cashews add a delicious, rich taste and are a healthier nut than most containing the same heart-healthy monounsaturated fat found in olive oil.

Spinach Tomato Salad - Recipe Ingredients:

4-6 cups fresh spinach, washed

1 cup grape tomatoes

¾ cup raw cashews, unsalted

½ cup yellow onion

2 tablespoons sweet basil

2 cloves garlic

2 teaspoon ginger

½ cup olive oil

2 tablespoons lemon juice

½ teaspoon sea salt (optional)

1 tablespoon lime juice

Spinach Tomato Salad - Recipe Instructions:

Chop up onions and place in a medium sized mixing bowl. Mince the sweet basil, garlic and ginger adding to mixing bowl. Next add olive oil, lemon juice, lime juice and sea salt. Mix ingredients and set bowl aside. In larger bowl add washed grape tomatoes, cashews and gently fold in freshly washed spinach. Makes 4 servings.
